Ethyl Carbamate Preventative Action Manual

The Ethyl Carbamate Preventative Action Manual was prepared and presented to the Food and Drug Administration (FDA) in response to an FDA request that the Wine Industry update the information available on how to reduce ethyl carbamate in wine by modifying agricultural and winemaking practices.

The FDA is making this information available with the permission of the authors as a service to assist interested wineries in identifying control measures the industry has suggested they may implement to reduce ethyl carbamate in their wines. The FDA is not specifically endorsing and has not verified the information contained in the document.
